Foodie Friday! Chocolate Orange Cupcakes

How has it got to Friday again already? Last week’s cakes went down well, so this week I’m going to share my recipe for chocolate orange cupcakes!

   
They were a firm favourite amongst my housemates, and not to brag but:

  
So anyway, here we go…

You will need these to make them:

110g of unsalted butter

110g of caster sugar

110g of self-raising flour

1-2 teaspoons of orange liqueur

1/2 teaspoon of baking powder

40g cocoa powder 

2 eggs 

Optional chocolate chips (about 150g)

And an oven preheated to 180C.

So just like last week, you’ll need to cream the butter and the sugar together until it’s a pale, creamy colour.  Again, if you feel the urge to eat any mixture it’s worth adding a couple of extra grams of ingredients just in case…
At this point add the liqueur – either a couple of teaspoons, or what I like to call “a good slosh”.  Again, how much of the liqueur you put in depends on how orangey you want the cake, but do bear in mind that the chocolate might overpower it if there isn’t much orange in the mix!

Next you’ll want to add the eggs and beat them in. Following this, sieve the flour, baking powder and cocoa together into the bowl/mixer, and stir it all together. At this point, add the chocolate chips if you’re using them (of course you are).

There you have it! Now sling a couple of teaspoons in 12 cupcake cases, and bake in that hot oven for 15-20 mins until the top is springy to the touch or a skewer inserted into the middle comes out clean.

Leave them to cool 🙂

For the icing, you will need:

280g icing sugar, sifted

140g unsalted butter

2 teaspoons of orange liqueur

30g Cocoa powder

(Optional: a Terry’s Chocolate Orange to decorate with)

So, first of all mix the sugar and butter together to form butter icing, and add the orange liqueur.  Once more, the slosh rule applies!

Sift the cocoa in. If the mixture is too dense, add a bit of milk – or more alcohol, whatever – and stir until you get to the right consistency.  

Add two teaspoons or so of topping to each cupcake, and use a fork to swirl nice patterns into the icing.  Decorate it however you’d like!

Voila, iced cupcakes!

Try not to eat then all at once…
